Greetings Gentlepunk, your Thanksgiving creation sounds wonderful!
As for me, I was fortunate enough to be invited to enjoy the day with a family that lives on a farm in central Wisconsin (in an 1860's home sitting atop a ridge between 2 beautiful valleys, in fact.) We enjoyed the best of meals - there was a small plate of turkey, yes (and no I did not partake) but mostly we ate every variety of produce-based dish you could imagine. From the just-made pickles to the potatoes to the brussels sprouts all the food was fantastic.
Did I just say, "brussels sprouts" and "fantastic" in the same sentence? Indeed I did. They were very fresh, which of course makes all the difference, but what made them delicious was the preparation method: Stir-fry lightly in olive oil, then a bit more with enough maple syrup added to coat. Yum!
Yuletide feasting will be here at home. Quorn brand mock turkey (leftovers are great on sandwiches the next day) along with squash, cranberries, and dressing.
I wonder what other folks are having?
So, what did everyone do for Thanksgiving? What are you planning for the Yuletime feasting? I'm rather proud of my "turkey" day creation: first time making a seitan kiev stuffed with tarragon and parsley flavoured EB. I'd post a picture but they disappear too quickly to be captured!
With thoughts of prompting discussion (and perhaps recipe sharing) I thought I'd ask this group, when you went veg, were there any meat-containing favorite dishes that you missed? And if so, did you find suitable alternatives?
One thing I missed was sausage gravy on biscuits (I'm an Ohio gal, can you tell?) Another was rumaki. To satisfy my gravy craving, I simply substituted Morningstar Farms "sausage". As for the rumaki, I couldn't find a good veg recipe anywhere so I came up with my own. At the risk of being less than modest, I can tell you it turned out fabulously, so here it is for all to enjoy:
(2) 8 oz. cans of whole water chestnuts, drained
(1) 5.25 oz. package of Morningstar Farms bacon strips
About 4 oz. mix of Kikkoman less sodium soy sauce + "rooster" (Sriracha) chili garlic sauce, mixed (about 2/3 soy and 1/3 garlic)
Marinade water chestnuts in sauce mix in the refrigerator about 1 hour. Cut bacon strips in half lengthwise. Stack 2 water chestnuts (if small) and wrap in a bacon strip; secure with a sandwich pick. Place on baking pan. bake at 350 degrees for 5-6 minutes. Watch carefully as bacon strips tend to overcook.
Easy and delicious! Serve at your next steampunk soiree and watch them disappear.
I'm a long-time vegetarian (ovo-lacto - I do eat some eggs & dairy) and I am delighted to find this group here on the Empire. Nice to see some shared recipes; I hope to post some of my own ideas in the future.
My dear husband and I are hosting a steampunk picnic at our home on Saturday with all veg food. We'll see how it goes!
Hello All!I thought I would start off by sharing some Veggie Friendly Recipes!Fabilicious Chickpeas 1 can chickpeas, drained and rinsedhalf onion, choppedhalf red bell pepper, choppedgarlic to tasterosemary to taste (dry or fresh)salt to tasteolive oilwater (optional)Heat olive oil, saute onion and bell pepper, then add garlic and rosemarry. Saute a bit then add chickpeas, cook until slightly soft, stir so they don't burn. Or add water, and simmer with lid on.Serve by itself or over brown rice (I use instant so it doesn't take forever)
2 cans pinto beans, rinsed and drainedhalf onion, choppedsalt to tastegarlic to tasteolive oilcilantro to taste, washed and choppedwaterHeat olive oil, saute onions, then garlic. Add beans and cook a while, add chopped cilantro. ADd water to cover the beans. Cook until soft, add salt to taste.Serve with corn chips, guacamole, cheese and chopped tomatoes. Also makes a great sandwich with favorite condiments. Could also be burritoes.
One Person Chili (perfect for those of us who are Solo Veggies)
2 cans legumes of choice, rinsed and drained(Black beans have lots of iron; I tend to mix red, black and white)1 can crushed tomatoeshalf onion, choppedchili powder to taste1 TBsp coco powderolive oilwaterHeat olive oil, saute onions. Add chili powder and coco. Add beans and tomatoes, fill tomatoe can part way with water and add that to pot. Simmer as long as you want, serve with corn bread or corn chips. Can also do in all day crock pot, but onions won't be browned; just dump it all together in crock pot and cook at preferred temp.
